Speckled muffin with raisins and nuts

Ingredients

  • 200 g butter
  • 300 g flour
  • 160 g sugar
  • 4 eggs
  • 100 g raisin and nut mixture
  • 1 arb.sh. baking powder
  • 1 spoon cocoa
  • icing sugar for decoration

Instructions

  • Mix the flour with the baking powder.
  • Beat the butter until fluffy.
  • Beat one egg into the butter, add a tablespoon each of sugar and flour and mix until fluffy. Stir until all the ingredients are incorporated.
  • Add the nuts and raisins when the mixing is finished.
  • Butter a baking tray and place 2/3 of the dough on it. Add the cocoa to the remaining batter and mix well. Place the cocoa dough on top. Use a spoon to make a groove in the top.
  • Bake at 180°C for 40-50 minutes. Check whether it is baked with a wooden skewer - if the skewer is stuck into the thickest part of the cupcake and it comes out clean and not sticky, the cupcake is baked, if the dough is sticky, leave it to bake for a few minutes. If the top starts to burn too much during baking and you still have to bake the cupcake, cover the top with foil.
  • Remove the baked cupcake from the tin and sprinkle it with icing sugar when it has cooled.
