Puff pastry with spinach-cheese filling

Ingredients
For dough
- 200 g cold butter
- 300 g flour
- 50 ml cold water
For the filling
- 200 g spinach leaves
- 5 eggs
- 200 g feta cheese
- 1 onion
- 1 carrot
- 100 g cheese
- 150 ml milk
- 20 g butter (oil) for frying

Instructions
- Make the dough. Grate the cold butter into the flour and mix, then pour in the cold water and knead the dough. Refrigerate for 30 minutes. Roll out the cooled dough and place it in a buttered cake tin. (I use 26 cm diameter). Prick well with a fork and bake in a 220°C oven for 10 - 15 minutes. Fill the baked cake with the filling.
- Prepare the filling. Fry the finely chopped onion and grated carrot, when the onion is nicely browned, add the spinach leaves and fry briefly.
- Place the fried mixture on top of the fried cake. add the crumbled feta cheese. Whisk the eggs and milk with a fork/whisk, add salt and pepper and pour over the filling. Top with grated cheese. Bake at 200°C for about 40 minutes.
Naudinga
- If using frozen spinach, thaw the spinach and squeeze out the liquid.
- Spinach can be replaced by other vegetables such as broccoli.
- To save time, you can use store-bought frozen puff pastry, you will need 1 packet. Thaw the dough and continue to use it as you would your own dough.
