Cupcake with courgettes and chocolate chunks

Ingredients

  • 110 g butter room temperature
  • 150 g sugar white and brown sugar may be mixed
  • 50 ml sour cream
  • 250 g courgettes (one small courgette)
  • 2 eggs
  • 250 g flour
  • 1,5 arb.sh. baking powder
  • 1 arb.sh. vanilla sugar
  • 0,5 arb.sh. salt
  • 150 g dark chocolate chopped

Instructions

  • Beat the butter well with the sugar, add the sour cream and stir.
  • Mix the flour with the baking powder, salt and vanilla sugar.
  • Grate the zucchini, lightly squeezing out the liquid. Add the zucchini to the batter, mix well. Beat in the eggs one at a time and add the flour.
  • Add the chopped chocolate. Stir lightly. Line an elongated cake tin with baking paper and pour in the batter.
  • Bake at 200℃ for about an hour, check for doneness with a wooden skewer - if the skewer comes out clean when you stick it in the cake, the cake is baked, if the dough is caked, it still needs to bake.
