Salmon in creamy Tuscan sauce

Ingredients
- 3 pcs salmon fillet about 350 g
- spices

- 1 spoon butter
- 2 slices garlic
- 1 onion
- 50 ml broth
- 100 g sun-dried tomatoes, without oil
- 200 ml cream
- 2 handfuls spinach
- 50 g grated Parmesan cheese
- parsley, dill

Instructions
- Rub the salmon fillets with salt and spices and place them in the hot oil. Fry on both sides for 3-5 minutes, depending on the thickness of the pieces. When cooked, remove the salmon from the pan.
- Crush the garlic by first removing the clove. The garlic is then more easily digested.
- After removing the salmon, in the same pan, add the chopped garlic and finely chopped onion. When the onion starts to turn translucent and is nicely fried, add the sun-dried tomatoes and fry, stirring, for about 2 minutes, then pour in the broth and cream and turn the heat down.
- When the sauce starts to thicken, taste and add salt if it is missing. Add spinach, Parmesan cheese. When the cheese has melted, return the salmon to the pan. Drizzle each salmon fillet with the sauce. Serve with boiled potatoes, rice or boiled pasta, vegetables.
