Ingredients
- 1 spoon olive oil
- 1 onion
- 400 ml vegetable broth
- 300 g broccoli
- 200 ml skimmed cream
- salt, pepper, ground nutmeg, parsley leaves
- 50 g grated Parmesan cheese
- bread croutons

Instructions
- Fry the chopped onion in oil for 4 minutes.
- Pour the broth into the pot, add the chopped broccoli and fried onion. Cook for about 10 minutes, i.e. until the broccoli is tender.
- Puree the soup in a food processor or blender. Add the cream and bring to the boil, season with nutmeg, salt and ground pepper.
- Serve with bread croutons and grated Parmesan cheese and parsley.
