Chicken breast roast with boiled potatoes

Ingredients

  • 2 pcs chicken breast fillet
  • 100 g flour
  • 2 eggs
  • 150 g breadcrumbs
  • oil for frying
  • salt, pepper

Garnish

  • 4 potatoes
  • dill or spices for potatoes
  • 200 g green beans or other favourite vegetables

Instructions

  • Peel the potatoes and bring them to the boil. Cook for about 15-20 minutes, until cooked, drain and add dill/spices
  • Boil the green beans in salted water and fry them slightly.
  • Spread the chicken breasts out, i.e. cut them in half flat, not all the way through, and spread them out to make a large steak. Cover with cling film and poke thinly with a rolling pin.
  • Whisk the eggs in a wide bowl, add salt and ground pepper.
  • After the meat has been pounded, roll it in flour, then in egg whites and then in breadcrumbs, and then fry it; it is important to make sure that the fat in the frying pan is hot. Bake on both sides until nicely browned.
