Ingredients
- 4 wholemeal tortillas
- 250 g cod fillet
- 1 jar black beans
- 2 spoons taco seasoning
- 0,5 cucumber (I used a long cucumber, if you use a short cucumber, you would need a whole one)
- 8 cherry tomatoes
- 4 spoons canned corn
- 4 spoons grated cheese
- 2 spoons sour cream

Instructions
- Cut the cod fillet into small pieces and fry in well heated oil. When the cod is nicely browned, add the drained and rinsed black beans. Add the taco seasoning, a couple of tablespoons of water, stir and fry for a couple of minutes.
- Heat the tortillas in another pan. Place in a dry frying pan and heat for about a minute on each side. No need to take too long.
- Slice the cucumber and halve the cherry tomatoes.
- Place the cod and beans on the warmed taco, add the corn, cucumber, tomatoes, grated cheese and, if you like, a little sour cream. Fold and eat. Delicious!
