Ingredients
For hedgehogs
- 200 g flour
- 2 eggs
- salt for cooking
For the sauce
- 20 g butter
- 200 g pulled pork
- 100 g spinach leaves
- 100 ml cream
- nutmeg
- for sprinkling the hard cheese on when serving

Instructions
- Knead the flour and eggs into a pasta dough. Make long sticks and cut into small pieces.
- Make a hedgehog out of each piece - through the reverse side of the grater.
- Boil in salted water for about 5-7 minutes, depending on the size of the urchins.
- While the hedgehogs are cooking, make the sauce. Put the butter in a pan, once melted, add the pulled pork and spinach leaves.
- When the spinach leaves have softened, pour in the cream, add the cooked hedgehogs and sprinkle with nutmeg. If the sauce is too thick, add the liquid from the cooked urchins.
- Sprinkle a little hard cheese on top when serving.
