Chicken stew with chorizo sausage and beans

Ingredients
- 450 g chicken thigh fillet
- 180 g chorizo sausages
- 0.5 chilli pepper, seedless
- 2 slices garlic
- 1 onion
- 1 Box canned, chopped tomatoes
- 250 ml broth
- 1 Box canned beans
- oil for frying
- fresh parsley
- salt and pepper to taste

Instructions
- Sprinkle the chicken thigh fillets with salt and ground pepper and cut the chorizo sausages into slices. Finely slice the onion, garlic and chilli pepper.
- Heat the oil in a frying pan, add the chicken thigh fillets. Fry until nicely browned, about 3-4 minutes per side. Add the sliced chorizo sausages. Stir-fry, turning occasionally. When the sausages are browned, add the chopped onions, garlic and chilli pepper. fry until the onions are soft.
- Add the canned chopped tomatoes and stock to the pan, stir and simmer for about 45 minutes until the sauce thickens.
- Add the canned beans (without the liquid) and heat for about 5 minutes.
- Add chopped parsley leaves when the stew is finished. Delicious!
