Chicken stew with chorizo sausage and beans

Ingredients

  • 450 g chicken thigh fillet
  • 180 g chorizo sausages
  • 0.5 chilli pepper, seedless
  • 2 slices garlic
  • 1 onion
  • 1 Box canned, chopped tomatoes
  • 250 ml broth
  • 1 Box canned beans
  • oil for frying
  • fresh parsley
  • salt and pepper to taste

Instructions

  • Sprinkle the chicken thigh fillets with salt and ground pepper and cut the chorizo sausages into slices. Finely slice the onion, garlic and chilli pepper.
  • Heat the oil in a frying pan, add the chicken thigh fillets. Fry until nicely browned, about 3-4 minutes per side. Add the sliced chorizo sausages. Stir-fry, turning occasionally. When the sausages are browned, add the chopped onions, garlic and chilli pepper. fry until the onions are soft.
  • Add the canned chopped tomatoes and stock to the pan, stir and simmer for about 45 minutes until the sauce thickens.
  • Add the canned beans (without the liquid) and heat for about 5 minutes.
  • Add chopped parsley leaves when the stew is finished. Delicious!
