Ingredients
- 2 eggs
- 2 slices of sweet potato
- salt, pepper
- butter or oil for frying

Instructions
- Cut a large hole in the middle of the stack.
- Heat the butter in a frying pan and place the slices of sweet potato in the pan, then crack an egg into the holes. Bake for a couple of minutes. Then, carefully, so as not to damage the yolk, turn it over. Bake again for a couple of minutes. If you don't like a runny yolk, bake for longer, but make sure it doesn't fry too hard.
- Eaten with your favourite vegetables.
