Quick rhubarb pie

Required products

  • 4 eggs
  • 160 g sugar
  • 200 g of flour
  • 1 or baking powder
  • 500 g finely chopped rhubarb
  • 50 g brown sugar (can be replaced with plain white)
  • 1 a spoon butter to smear the tins

Making

  • Beat the eggs with the sugar. Add the flour mixed with the baking powder. Mix well.
  • Grease a tin with butter, add the chopped rhubarb, add the brown sugar and mix. Then pour in the batter and spread it nicely over the rhubarb.
  • Bake at 180℃ for about 30-40 minutes.
    Check with a wooden skewer - if it comes out clean when inserted, the cake is done; if it is still covered in batter, it needs a little more baking time.
  • Sprinkle the baked cake with powdered sugar. It is very delicious with ice cream.

I used a small 25x35 cm tin, you can also use a round, cake tin, I would recommend a 28 cm diameter.
