Required products

  • 200 ml lemon juice
  • 200 g sugar
  • 6 egg yolks
  • 1 a spoon grated lemon peel
  • 150 g butter

Making

  • Combine the lemon juice, sugar, egg yolks, and grated lemon zest in a small saucepan/container. Place the container in a larger saucepan of boiling water. Stir the entire mixture constantly until it begins to thicken.
  • When it starts to thicken, remove from the hot water, strain to remove any lemon peel. Add the butter and mix well. The butter should melt.
  • Pour into jars with lids and store in the refrigerator when cool.
