Ingredients
- 200 ml lemon juice
- 200 g sugar
- 6 egg yolks
- 1 spoon grated lemon peel
- 150 g butter

Instructions
- Mix the lemon juice, sugar, egg yolks, grated lemon zest in a small saucepan/bowl. Place the bowl in a large saucepan with boiling water. Stir the whole mixture constantly until it starts to thicken.
- When it starts to thicken, remove from the hot water and strain to remove the lemon peel. Add the butter, mix well. The butter should melt.
- Pour into jars with lids and refrigerate once cooled.
