Ingredients

  • 200 ml lemon juice
  • 200 g sugar
  • 6 egg yolks
  • 1 spoon grated lemon peel
  • 150 g butter

Instructions

  • Mix the lemon juice, sugar, egg yolks, grated lemon zest in a small saucepan/bowl. Place the bowl in a large saucepan with boiling water. Stir the whole mixture constantly until it starts to thicken.
  • When it starts to thicken, remove from the hot water and strain to remove the lemon peel. Add the butter, mix well. The butter should melt.
  • Pour into jars with lids and refrigerate once cooled.
