Chicken breast fillet in creamy pesto sauce

Ingredients

  • 600 g chicken breast fillet
  • oil for frying
  • 1 onion
  • 2 slices garlic
  • 2 spoons pesto
  • 200 ml cream I use 35%, but it can be leaner.
  • salt, pepper
  • parsley

Instructions

  • Cut the chicken breast fillets into steaks, i.e. cut them in half thicknesswise. Sprinkle with salt and pepper, or use your favourite spices such as thyme.
  • Fry the meat in hot oil for 3-4 minutes on each side, the meat should be cooked. Remove from the pan to a plate.
  • Add the finely chopped onion to the pan, fry until soft, add the chopped garlic and pesto and fry until the garlic starts to smell. Then return the meat to the pan and pour in the cream. Heat until the cream boils and starts to thicken, about 3 minutes.
  • Delicious with boiled/baked potatoes, rice, vegetable salad.
