Bread with oatmeal

Ingredients
- 300 g wheat flour, coarse ground
- 200 g wheat flour
- 100 g fine oatmeal
- 1 arb.sh. salt
- 1 spoon Honey
- 5 g dry yeast
- 500 ml water

Instructions
- Mix all the flour, oatmeal and dry yeast together.Add the salt and honey to the water and pour it over the flour mixture, mixing it all together to make a thick paste. Cover with a lid or cling film and leave to rise for 12-20 hours.
- Before baking, pour the risen dough out onto a floured surface (where you have space for rolling, kneading, etc.) and knead it slightly, folding the edges inwards. Shape into a round loaf and leave to rise for about 1,5-2 hours.
- Half an hour before baking, switch on the oven (250°C) and place a heavy-based pot with a lid on the lower shelf, where the bread will bake, and it should heat up just like the oven.
- When the oven is hot, carefully remove the pot (hot!!!) Place the risen loaf in the pot, cut the crust with a sharp knife, and sprinkle with sunflower seeds or any other seeds you like.
- Bake covered at 230° for about 40 minutes, then remove the lid (carefully - hot!!) and bake for another 10 minutes at 200°C
