Austrian Scrambled Pancakes

Ingredients
- 3 eggs separate yolks and whites
- 2 spoons sugar
- 180 ml milk
- 100 g flour
- 1 arb. š vanilla sugar
- salt
- 50 g butter for frying
- powdered sugar for sprinkling
- jam for serving

Instructions
- Whisk the egg whites and sugar until stiff.
- In another bowl, mix the egg yolks, milk and vanilla sugar. Add the flour a little at a time. Carefully fold in the whisked egg whites.
- Place half the butter in a hot frying pan, once the butter has melted, pour the batter into the pan and bake for about 4 minutes. When the bottom is nicely browned, divide the pancake into four parts with a spatula and turn each part over. Add the remaining butter, spread it over the whole pan.
- When the second half is cooked, use a spatula to break the pancake into small pieces of about one bite. Fry for about one minute more.
- Place on a plate, decorate with icing sugar, top with your favourite jam and enjoy!
