Salmon with peanut crust

Ingredients

  • 500 g salmon fillet
  • 1 spoon grated lemon peel
  • 2-3 spoons lemon juice
  • salt
  • pepper
  • 2 spoons ground breadcrumbs
  • 50 g roasted, chopped peanuts
  • 2 spoons oil
  • 1 slice garlic
  • 200 ml rice

Instructions

  • Turn on the oven to heat to 200℃.
  • Put the rice on the stove and cook until soft, about 10 minutes.
  • While the oven is preheating, prepare the salmon fillets: clean them if necessary, divide them into 4 parts and drizzle with lemon juice.
    In a separate bowl, mix the breadcrumbs, nuts, grated lemon zest, pepper, salt (if you add salted nuts, you can add less or no salt), chopped garlic and oil. Roll the fish pieces in the mixture and place them on a greased baking tray.
  • Bake for about 12-15 minutes.
