Instructions
- First, prepare the mix. To do this, mix all the ingredients in the mix and leave on the kitchen cupboard for an hour. Then place in the fridge for at least 16 hours. (can be left for up to 24 hours)
- The next day, take the mixture out of the fridge, add the water and stir well. Then pour in the flour in batches, stirring until about half of the flour is added, then add the salt and the remaining flour. steam for about 5 minutes, then cover the dough and let it rest for about 15-20 minutes. It is easier to knead the dough once it has rested. continue kneading for about 15 minutes. I used a food processor with a kneading foot and kneaded for 15 minutes at the slowest speed. I kept the process the same, i.e. letting the dough rest.
- Divide the kneaded dough into balls of approximately 280 g, pat each ball nicely and fold it back into a ball. I put them on a baking tray with the higher edges and left them to rise after wrapping them in cling film. I was heating up in the kitchen, not looking for a warmer place. Rise for about 2 hours.
- We switch the oven on, ideally at 275℃, but I feel a bit panicky at that temperature in the oven, so I bake at 245℃. Place the pizza stone in the oven. I heat the stone for at least half an hour.
- While the balls are rising, prepare the sauce. For the sauce I used a jar of canned chopped tomatoes, added salt, olive oil and chopped basil leaves. I cut the mozzarella into cubes.
- Once the dough has risen, take one ball at a time. roll in flour and start shaping the sole with your fingertips, then start stretching, holding with one hand and gently pulling with the other. Brush with the sauce and bake. Bake until the edges start to turn yellow, about 4-6 minutes, then remove and add the parmesan cheese and mozzarella. Carve back and bake for about 5 minutes more. On top of the baked pizza, place the rocket, ham and blue cheese (if you like).
